paleo chocolate-chip pumpkin muffins
 
Ingredients
  • 1½ cups of pumpkin
  • 3 eggs
  • ¼ cup plus 1 tablespoon of maple syrup
  • ¼ cup coconut oil (melted)
  • 2 cups super-fine almond flour
  • 1 tsp baking soda
  • 1.5 tsp pumpkin pie spice
  • 1.5 tsp cinnamon
  • ¼ c chocolate chips
  • ¼ tsp sea salt
Instructions
  1. Preheat oven to 350
  2. In a mixer, mix together pumpkin, vanilla, maple syrup, eggs, and coconut oil.
  3. While still mixing, slowly add in the almond flour, sea salt, and baking soda, cinnamon and pumpkin pie spice.
  4. When everything is mixed together, fold in the chocolate chips.
  5. Pour into a greased muffin pan and bake for 30-35 minutes, or until center is set.
