Here is what I’ve managed to cross off the list lately…
#22- Try 5 new recipes! I really enjoy cooking, but before Braylen was born we were never home long enough to cook. Literally, we had something to do almost every evening. In many ways its so nice to be able to slow down and stay at home a lot more. We are really enjoying all this time together with our sweet girl. And I’ve been cooking… A LOT!
Here are the 5 new recipes I tried to cross #22 off the list:
1. Mexican Chicken from Kelly’s Recipes. Click here for the recipe. We really enjoyed this, if you in the mood for Mexican I would definitely suggest this!
2. Cumin Chicken from Cooking Light. You can get this recipe here. This chicken turned out really good. Not only was it good it is only about 250 calories and has only 5 ingredients! So for a quick, easy, low-cal dinner, this is a great idea.
3. Heavenly Chocolate Ice Cream or 10 Million Calorie Goodness (as I refer to it). I did a post on this last week and here is the exact recipe:
21 ounces Milky Way bars, cut into pieces
1 (14 oz) can sweetened condensed milk
About 3 quarts milk
5.5 oz. chocolate syrup
Combine candy and sweetened condensed milk in a large saucepan; cook over low heat, stirring constantly, until candy melts (I did this in the microwave and it worked just fine). Cool, stirring occasionally (I put it in the freezer for a few minutes). Add about 1 quart milk to candy mixture, beat until well blended. Pour mixture into freezer can of 1 gallon hand turned or electric freezer; stir in chocolate syrup. Add enough milk to fill freezer container to within 4 inches from top (there should be a fill line, use it). Freeze according to manufacturers directions.
Sidenote: This is wonderfully delicious, it taste a lot like a Frosty from Wendy’s. I can’t be responsible for the excessive weight gain that will come from partaking in this, it might be smart to try a recipe from Cooking Light for dinner if you are having this as dessert, or better yet just skip dinner!
4. Crunchy Chicken from Campbell’s website. You can get the recipe here. Quick and easy to make, sort of a baked version of fried chicken. We loved it and I will definitely make this again.
5. Shrimp Glaze from Cooking Light. You can get this recipe here. This was quick, easy, and low-cal. However, it didn’t deliver on flavor. Maybe I’ll tweak it a little if we ever do it again.
#26- Apply to grad school.
I have a officially applied to grad school here…
They offer an online degree program that will be perfect for me. I won’t have to drive back and forth to campus so that means more time with Braylen.
#56- Open a savings account for Braylen. After receiving her social security card in the mail we were finally able to open her very own savings account.
