I just wanted to check-in, mainly for the accountability on my part, and let you know how the Paleo diet is going. Last week was pretty busy for us and coupled with poor planning on my part, my eating was horrible. Paleo was out and take-out was in, we ate on the go, had food delivered, ate dinner at 10:00 PM, basically anything that you aren’t supposed to do.
But on sunday evening I made a quick grocery run and by Monday morning I was back to Paleo. One of the hardest meals for me is breakfast. The fact that I’m not a breakfast eater makes it hard to begin with but when I do eat breakfast it’s normally cereal or oatmeal. I’m a creature of habit and since neither of those is allowed it really meant I had to find new things to eat for breakfast.
So this week I tries a few new Paleo recipes for breakfast that I want to share. You know, just in case you decide you want to make “bread” using things like almond butter and honey. I hope you can sense my sarcasm, I really am embracing this diet but it’s a complete lifestyle overhaul and it definitely requires changing the way you think about food.
I’m reading the book now so when I finish I’ll have a better overview to give you but for now I’m just keeping it simple and trying to follow the basic rules. Here are a few new recipes I added to my breakfast repertoire this week.
- ½ cup
- 2 eggs
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- ¼ teaspoon stevia
- ¼ teaspoon celtic sea salt
- ¼ teaspoon baking soda
- 1 tablespoon cinnamon
- I just used my stand mixer and mixed almond butter until creamy. Then I mixed in eggs, honey, vanilla and stevia. Added salt, baking soda and cinnamon and mixed all ingredients until they were combined. Pour the batter into a greased 8X8 inch dish and cook for about 15 minutes at 325.

I have been hearing so much about paleo lately. since it’s clean eating & sugar free, what do you do about coffee??? I usually use hazelnut creamer and splenda. Is that a no-no on paleo? Keep up the great work!!

That omelet looks seriously good – I think we’ll try that for breakfast in the morning! I completely bombed on paleo this week, too and with vacation next week, I’m thinking I need to pick back up after that. Which book are you reading?
One thing I do which really helps with lunch is make lots of homemade salsa and pico de gallo. I can use it on salads for lunch instead of creamy dressings and it keeps it from being dry without using condiments that you can’t have. We also grill about 8 chicken breasts on Sunday afternoon and chop them or pull them apart to keep in the fridge for quick meals. We can add them to salads and omelets and it cuts way down on prep time.
