I’m coming to the end of Level 1 on the Paleo diet. You can check out last week’s Friday fitness post to learn more about Level 1. I knew before I even stepped on the scale this morning that no matter what, I feel better about myself, I have more energy and I’m going to keep this healthy eating thing up. This morning the scale showed I had lost 5 pounds in the last two weeks. That’s huge for me.
Monday marks the start of Level 2 and things get a little more strict. I cut out transitional foods and go from 3 open meals each week to 2 open meals. I actually think I’ll see more results with this phase.
The biggest question I get is about what I actually eat. It’s easy to say lean meats, vegetables, nuts and fruits. But in a world of fast-food, Pinterest desserts that look amazing and carbs it’s hard to actually stick to those things. We’ve figured out that it’s easiest to just stay home and eat, going out always leads to bad food choices. So we’ll save that for special occasions instead of letting it be something we do just because I don’t want to cook.
I eat a lot of fresh fruit. Especially things that are easy to just pick up and eat when I want a snack, apples and bananas tend to be my go-to’s. Almonds are an easy snack too. I also love almond butter and a banana.
And it’s entirely possible to enjoy our weekly CFA dates. I just go with the kids grilled chicken nuggets, a fruit cup and if I’m really hungry I’ll add a side salad too.
I eat asparagus all of the time. I usually get Allen to grill it for me because I think the grill gives it a great flavor. Below are two dinners I’ve eaten recently. Top, grilled asparagus with grilled chicken, Paleo barbeque sauce and low-sodium turkey bacon. Bottom, blackened popcorn shrimp, half of a baked sweet potato and grilled asparagus.
