We’ve been on a healthy eating kick for the last few months. Simple changes in our diet have really made a difference. I was sure about one thing, I did not want to start another diet. I wanted to make real changes that we would stick to, real changes that would instill healthy eating habits in BK.
In my search for clean and healthy food that my family would still enjoy, I came across this recipe from Gracious Pantry. I was all set to make it until I did my weekly grocery shopping and found that my local store didn’t carry savory. Not a single jar of savory to be found on the entire spice aisle. I went ahead with my shopping, thinking that I would end up stopping by a different store, but the day came and I never bought the savory.
So I improvised and they were still a hit!
Chicken and Asparagus Kabobs
Adapted from Gracious Pantry
- 4-5 large boneless, skinless chicken breast
- 1 pound of asparagus
- 3 teaspoons basil
- 1 1/2 tsp garlic powder
- 1 1/2 teaspoons onion powder
- 3 teaspoons lemon juice
- 3 teaspoons olive oil
- 1 tablespoon lemon zest
- a pinch of salt and black pepper
Place your wooden sticks in a pan of water to soak while you are prepping the chicken and asparagus. It’s sort of an important part, if you don’t they have a tendency of catching on fire.
Mix all of your ingredients (except chicken and asparagus) in a small bowl. Cut up chicken and asparagus to place on skewer (approximately 1-1 1/2 inch pieces). Place all ingredients in a zip lock bag and mix around in the bag until everything is completely covered.
Alternately place chicken and asparagus on the kabob sticks.
Place the kabobs on the grill and cook for about 8-10 minutes. I probably cooked mine longer because I’m a little scared of undercooked poultry.
