I mentioned that I was on a healthy-cooking kick and I usually do well with it until the weekend comes. I'm still a work in progress.I've been trying to switch my mentality and pin things that are really healthy and free of creamy goodness and loaded with carbs. I know, I know those look the best and incidentally the things that make my mouth water.But I'm going to the beach at the end of May so I've been trying to eat better and choose recipes that fit into the the healthy category. mid-week brain dump
because I stayed up too late reading last night, I'm going to pass a brain dump off as a post. I'm way behind on posting recipes so I'll probably inundate your reader with them sometime soon. I'm apologizing in advance for all of the posts but not for the recipes because it turns out they're all pretty tasty. Including this Fiesta Baked Potato.I started working out with a trainer at the beginning of April and since that first workout some muscle group has been sore every day. Overnight Oatmeal
I love a good bowl of warm oatmeal in the morning. It's filling, healthy and tasty and it became my go-to breakfast years ago. But people would tell me or I would read in fitness magazines about oatmeal being this super breakfast food. Basically, something that would hold you over until lunch without feeling the need to snack. Let's be honest, that just wasn't the case for me.And then I read that I should be using steel-cut oats instead of instant or quick-oats.Well.I bought a container of the steel-cut oats and noticed they had to be cooked for a while and it didn't have a microwave option.
